Today's BL Restaurant Profile is about the Flying Pig Grill & Cantina in Olmito... which is sort of Brownsville. "Sometimes you want to go where everybody knows your name." For many people, "The Pig" really is that place and so much more. The Pig is a friendly familiar place that feels like your other home in world overrun with corporate chains lacking in personality, local identity and character.



The Flying Pig was founded by Owner Hector Burnias in a building owned by his family for three generations. His grandfather had a convenience store there many years ago that at one point was the last bus stop to go into Brownsville from the area. Upon returning home from living in Las Vegas, Hector wanted to open a place here that reflected what he had learned and seen while working away from home.

The concept of The Pig has evolved over time. Hector has always had bad fantastic burgers but the pivotal point was when he decided to add premium cocktails and a vast assortment of beers to his menu. Hector had been visiting major markets such as Austin, Houston, just to name a few, and seen that premium cocktails and vast beer selections were becoming very popular and working to draw in customers. He applied this strategy and took it to the next level in his tiny nondescript structure on the access road in Olmito. Additionally, they have live music with popular covers every other Friday and its a great place to watch a game. When you have a place in a location like his you can take two approaches, be a regular place or create a destination that people will go out of their way to visit.

Aside from having a vast menu of high quality foods, premium cocktails and the largest selection of Texas Beers south of San Antonio, Hector has made The Pig something special. He has created a location that makes everyone feel welcome. You can just as easily see some regular guys at the bar drinking $2 drafts as you can see an executive enjoying a premium exotic cocktail and munching on a delicious Kobe, Lamb, Bison. Ostrich or Elk Burger!

It's a place where you will always feel you are among friends, where a smile and conversation is as welcome as the arrival of your meal. On Wednesdays they have $0.55 wings and they are the big wings, not those tiny ones. They also have flat screen TVs and play all the most popular games and no matter how hot it is outside you can expect a cold beer, a hot meal and a friendly place. The only thing that remans is for you to Be part of it.
